Paleo Big Breaky

If you are looking for a twist on a big breaky or poached eggs with bacon you will love this Paleo Bacon & Egg dish.
This is a great Recipe for Breaky or Lunch for the whole family or just for one, just adjust the amounts of ingredients you use. It is also a super versatile recipe that you can just use what ever veggies you have in the fridge. Try and include Avocado for its good fats it provides. Also be sure to include natures magical medicines - Garlic, Ginger & Onion!!

Organic, Free Range ingredients are always best but just do the best you can do but make sure you wash your produce well if it isnt organic, See my suggestions here
Bacon & Eggs with Veggie Hash & Chips
Nitrate Free Bacon Rashers
Eggs
Sweet Potato
Mushrooms
Brussel Sprouts
Zucchini
Leek
Onion
Spinach
Asparagus
Broccoli or Broccolini
Beans
Tomato
Ginger- grated
Garlic - crushed
Salt & Pepper
Avocado
a couple of Tbsp of chicken stock
Mayonnaise
dijon mustard
raw honey
apple cider vinegar (ACV)
Heat your Fry Pan with a small amount of Coconut Oil. Boil a small amount of water in a small pot for the eggs.
Cook Bacon to your liking - I love to have some crunchy rind! Put the cooked bacon aside.
Thinly Slice the sweet potato in to even pieces. Cook in the Bacon fat in the pan until golden & cooked through. sprinkle with sea slat Set aside.
Dice up your veggies.
Sautee the onion, leek and mushroom in the bacon fat and add some coconut oil if needed. Add in the remaining veggies, except the avo, tomato and spinach. add the Chicken Stock in once they have sauteed a little. Remove from heat and set aside in the pan still. Allow to sit for a little bit and then add in the spinach and tomato to just soften a little but do not return to the heat.
Eggs
When your water has boiled add a little dash of ACV, slowly Add your eggs in using a ceramic mug or little heat proof bowl- this helps hold the egg together as it is added. I only do 2 eggs at a time in the one pot. turn the heat off and cover the pot. let cook for a few minutes until the white is cooked and the yolk to your liking. you can turn the heat on the lowest setting briefly if you need to add more heat in to cook the eggs.
Dressing/Sauce
Add a Tbsp of Mayonnaise, Tsp of Dijon Mustard, a dash of ACV & Tsp honey into a small bowl and mix together. Drizzle over the eggs and veggies.
When I plate this up I like to put the Veggies down, some ripped up or diced bacon sprinkled on top, Poached egg on top with the sauce drizzled over and have the crunchy bacon rind off to the side and the sweet potato chips off to the side as well. add diced or sliced Avocado on top of the egg and sprinkle with slat and pepper.
Eat Up YUMMMMMM!!!!
